Are Squirrels Vermin

Squirel is not listed in my cook-books. Do you have any cooking experience of the vermin ?

Sorry animal lovers, but we have a National issue here with Grey squirrels.

They have decimated the native reds and not only is it legal to shoot them, it is encouraged by Government.

The local butcher will pay decent money for freshly shot ones, so folks must be using them in the kitchen.

Thing is, do I go for a simple casserole / stew, or a pie ?

Any ideas ?

~ 1 squirrel per person, cleaned
~ favorite seasonings
~ medium onions, chunked, 1 per squirrel



Place onions evenly in a greased roasting pan.

Season squirrel(s) to taste inside and out with your favorite seasoings.

Place squirrel(s) on top of onions.

Cover with foil and bake at 400 degrees for 30 minutes or until done.

Remove foil and cook 10 minutes to brown meat. Turn halfway through.

Serve and enjoy.
